I'm going to make this tonight!

Avocado-Goat Cheese Salad with Lime Dressing

The Product: A delicious oil that’s a good source of healthful fat.
The Payoff: Rich, buttery flavor.
Ingredients
  • 1 1/2 cups matchstick-size strips peeled jicama
  • 1/4 cup avocado oil
  • 3 tablespoons fresh lime juice
  • 1 5-ounce package mixed greens
  • 1 large avocado, peeled, pitted, sliced
  • 1 5-ounce package soft fresh goat cheese or cotija cheese, crumbled

Preparation
 
Toss first 4 ingredients in large bowl. Sprinkle with salt and pepper. Add avocado and goat cheese; toss gently. Divide salad among plates.

Not So Far Now



This photo was taken in September when I was completing a ten mile run with my marathon training group.  Looking back, it doesn't even seem that long and I remember being very nervous about not finishing the full distance.  After completing my longest training run of 25 miles yesterday, it was nice to reflect on just how far I've come.  The Carlsbad Marathon is within sight and I can't believe it's so close!  It's only three weeks away now!

In the spirit of New Year's Resolutions, I think it's import to reflect on the importance of goal setting in the new year and taking the small steps that add up to one large accomplishment.  

For 2011, I challenge everyone to set a big goal and then break it down into small, manageable pieces using a time line of a one year goal, one month goal and one week goal that all contribute to the larger achievement.
